The Tomatillo 'Chupon de Malinalco' is a rare heirloom variety , native to Malinalco, Mexico . Its elongated, pointed shape, beautiful lemon yellow color , and unique sweet and sour flavor make it an exceptional culinary ingredient. This fruit, which can grow up to 10 cm (4 inches) long , offers a taste reminiscent of a sweet paste tomato combined with a cherry with a shell . Ideal for both savory and sweet preparations , it can be enjoyed raw like an apple or cooked like a tomato .

Cultivation method:


Sow seeds indoors 6 weeks before last frost , then transplant into the open ground in late spring when the soil is well warmed. Plant 6-12 mm (1/4-1/2") deep , spacing plants 45-60 cm (18-24") apart and rows 90-120 cm (36-48") apart . Germination takes 15-20 days at an optimum temperature of 21°C (70°F). It prefers full sun and well-drained soil to produce large, tasty fruits.


Harvest and uses:


Harvest when the husks turn brown and begin to split . Their balanced flavor, between sweetness and acidity , allows them to be used in salsas, sauces and desserts .

Ingredients (for 2 pots):






  • 500 g of 'Chupon de Malinalco' tomatillos , washed and cut into pieces


  • 250 g of cane sugar


  • The juice and zest of 1 organic lemon


  • 1 vanilla pod (or 1 tsp vanilla extract)


  • 1 pinch of salt






Preparation :




  1. In a saucepan, mix the tomatillos, sugar, lemon juice and zest . Let marinate for 30 minutes .


  2. Heat over low heat until the sugar melts, then add the split vanilla pod .


  3. Let simmer for 30 to 40 minutes , stirring regularly until thickened.


  4. Remove the vanilla pod, then blend lightly if you want a smoother texture.


  5. Pour into sterilized jars and allow to cool before storing in the refrigerator .
