The red shallot is distinguished by its purple color and pink flesh, with a more pronounced flavor than the classic shallot. Highly sought after in cooking for its rich aroma and beautiful color, it is grown in the same way as other shallots, in full sun in loose, well-drained soil. It keeps for a long time and enhances stews, vinaigrettes, or marinades wonderfully.
