Quick Field Strawberry Coulis

Ingrédients

300 g (about 500 mL or 2 cups) field strawberries, hulled

15 mL (1 tbsp) granulated sugar

10 mL (2 tsp) fresh lemon juice

15 to 30 mL (1 to 2 tbsp) cold water, as needed

1 small pinch salt

Préparation

1. Quickly rinse the strawberries under cold water, then drain them well.

2. Place the strawberries, sugar, lemon juice and salt in a blender. Blend until very smooth, about 30 to 45 seconds.

3. Taste the coulis. If the berries are particularly tart, add a little more sugar, 5 mL (1 tsp) at a time. Blend in only enough water to reach the desired consistency.

4. For a silky finish, press the coulis through a fine-mesh sieve with a spatula. Skip this step if you prefer a more rustic texture.

5. Serve immediately or refrigerate in an airtight container. Use within 2 days.
