Music garlic (Allium sativum var. ophioscorodon‘Music’)is a hardneck Porcelain garlic especially valued in cold regions for vigour, large cloves, and long storage. A well-developed head normally contains 4 to 7 large fleshy cloves beneath thick white to pearly-white wrappers. Medium to strong flavour becomes very hot when eaten raw, then mild, rounded, and savoury through roasting. Plants reach approximately 60 cm (24 in), produce an edible garlic scape in early summer, and tolerate Zone 2. Harvest occurs around midsummer, fitting northern gardens with short growing seasons. This supports northern gardens.
Plant cloves in fall, at least four weeks before lasting soil freeze, in full sun or very light partial shade. Divide the bulbs only when soil is prepared. Position every clove point upward at a depth of 8 cm (3 in), with 15 cm (6 in) between plants and approximately 30 cm (12 in) between rows. Deep, loose, fertile, exceptionally well-drained soil prevents winter rot. Water after planting, then mulch once the ground cools. In spring, weed early, feed moderately, maintain even moisture, and harvest scapes at their first curl to support head development. Keep meltwater from collecting around the row.
Harvest Music at midsummer when three or four lower leaves are brown while five or six upper leaves remain green. Stop irrigation approximately two weeks beforehand, lift heads with a fork, and cure whole plants for two to four weeks in shade with strong airflow. Thick wrappers support storage into spring in a cool, dry, dark location. Large cloves are easy to portion: use them sparingly raw, chop them into sauces and stews, or roast them to develop sweetness. Reserve the finest heads for future planting and move the crop through a four-year rotation. Inspect storage monthly and use any softening or damaged clove promptly.
