This heirloom perennial herb develops grey-green, slightly downy, evergreen foliage, forming a bushy, aromatic habit. The leaves have a distinct, slightly bitter flavor, highly prized for seasoning meats, soups, cheeses, and stews. In summer, the plant produces attractive mauve flowers in spikes that strongly attract pollinators, especially bees.

Planting and maintenance:
Sow directly outdoors from mid to late spring in average, well-drained soil in full sun, or start indoors 6 to 8 weeks before the last frost. Sow at a depth of about 6 mm, then thin gradually to a spacing of 60 to 90 cm. Water moderately once established and lightly prune the woody stems annually to encourage tender new growth. Winter protection is recommended in cold climates.
