Caraway is a biennial herb, growing 45 to 60 cm tall, valued for its seeds used in breads, pastries, cheeses, and soups. Fresh leaves make excellent garnishes. Hardy to zone 5, it thrives as an annual in colder regions.

How to Grow:

Direct sow seeds outdoors in a sunny area. In zones 5–8, sow in September or mid-spring. In colder zones, sow mid-spring. Plant seeds 3 mm deep, 2.5 cm apart, thinning to 15 cm. Caraway may self-seed in mild climates. Fall-sown seeds mature the following August. Harvest whole plants when fruit ripens, drying them in the sun. Separate seeds by threshing dried fruits.
