Organic purple ‘Dragon’ carrot (Daucus carota subsp. sativus ‘Dragon’), often marketed as ‘Purple Dragon’, produces roots with magenta-purple skin, orange flesh, and a yellow core. Broad shoulders resemble a Chantenay type, while interior colour creates strongly contrasting slices. Flavour is described as mild, sweet, and sometimes lightly spicy. Roots may be served raw, grated, pickled, roasted, or cooked in soups. Exterior colour may fade or migrate during some cooking methods; use short separate cooking when presentation matters. Sources report maturity from approximately 65 to 90 days, too broad a range to promise one exact date. Root size also changes with soil depth and spacing.
Direct-sow as soon as soil can be worked, then make successive sowings through midsummer when enough season remains. Place seed approximately 0.5 to 1 cm deep in fine loose deep well-drained soil. Expose shoulders gently without injuring purple skin, then lift one sample while soil is slightly moist. Harvest progressively through approximately 90 days when roots remain tender and sound. Trim tops while leaving a short stem and refrigerate roots separately. Monitor carrot rust fly, flea beetles, slugs, and irregular moisture. Cover exposed shoulders lightly to limit greening. Label the row so ‘Dragon’ is not confused with other purple carrots whose interiors may differ. Discard roots showing rot, contamination, or uncertain storage history.
