'Violette Elephant Head' amaranth is an exceptional heirloom variety, famous for its enormous burgundy flower heads reminiscent of an elephant's trunk. Introduced from Germany in the 1880s, this vigorous plant quickly became a garden centerpiece, reaching 90 to 150 cm (3 to 5 feet) in height. It thrives in full sun, tolerates summer heat very well, and is perfectly suited to zone 5a climates. Its sturdy stems and long-lasting blooms make it an ideal candidate for borders, ornamental landscaping, and both fresh and dried bouquets.

Beyond its impressive decorative appearance, this amaranth is also a useful plant: the young, tender leaves can be cooked like spinach, and the mature seeds, rich in protein, can be prepared as a nutritious grain or ground into flour. Farming method

Sow 4 to 6 weeks before the last frost, at a depth of 1.5 mm (1/16"). Although germination prefers a temperature of 20 to 24°C (optimum 21°C), this variety tolerates starting temperatures as low as 15°C. Transplant outdoors once all risk of frost has passed.

Space the plants 7 to 10 cm (3 to 4 inches) apart in rows 45 to 60 cm (18 to 24 inches) apart. Amaranth prefers very sunny locations (sun level 3) and well-drained soil, and requires little watering (level 1), making it a particularly easy plant to care for. Germination occurs in 4 to 10 days. Maturity is reached in 60 to 75 days.


Harvesting and preservation

Harvest the young leaves for tender and flavorful eating, or wait until the flowers are fully open to enjoy their spectacular beauty in a bouquet. The seeds are harvested when fully ripe and can be eaten as a versatile grain.

For cut flowers, pick the stems when the flower spikes have taken their full shape for optimal vase life or drying.
