Organic 'Little Finger' eggplant (Solanum melongena), offered by Gaia, an early and productive variety

The 'Little Finger' eggplant is an early heirloom variety, appreciated for its high productivity and its elongated fruits measuring 7 to 15 cm . Its dark purple skin and tender, silky flesh offer a mild, slightly sweet flavour . Suitable for growing in pots or in the open ground , it cooks quickly and lends itself to many recipes, from grilling to stir-fries. Its harvest is ideal when the fruits are young and shiny , guaranteeing a fine, delicate texture.

Cultivation method

Sow indoors 8-12 weeks before last frost, in a warm substrate (23-30°C) . Germination takes 7-14 days . Transplant outdoors when daytime temperatures reach 18°C ??and nights remain above 10°C . Plant in full sun, in rich, loose, well-drained soil, with regular watering . Staking may be necessary to support fruit growth.

Harvesting and conservation

Harvest eggplants when the skin is shiny and a fingerprint does not leave a mark . A dull skin or soft consistency indicates overripeness . Store at 10-12°C with 90% humidity for up to one week .

Recipe: Sautéed 'Little Finger' Eggplants with Garlic and Ginger

A quick preparation that enhances the tender texture and slightly sweet flavor of this eggplant.

Ingredients (for 2 people)

  • 6 'Little Finger' eggplants
  • 2 cloves garlic, chopped
  • 1 tbsp grated ginger
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • Chopped green onions (optional)

Preparation

  1. Cut the eggplants in half lengthwise.
  2. Heat the sesame oil in a pan and sauté the garlic and ginger.
  3. Add the eggplant and sauté for 5 to 7 minutes until golden brown.
  4. Deglaze with the soy sauce and honey, mix well and cook for 2 more minutes.
  5. Serve hot, sprinkled with green onions.
