Cultivation method:
Sow directly into the ground after the last frost , or start indoors 4-6 weeks before the last frost. Sow 12 mm (1/2") deep, spacing plants 30 cm (12") apart and rows 90 cm (36") apart. Germination takes 7-10 days at an optimum temperature of 25°C . It prefers well-drained soil and full sun .
Harvest and uses:
Harvest the young shoots and tender leaves 50 days after sowing . Delicious raw in salads , it can also be sautéed or added to soups and stews . Store in a plastic bag in the refrigerator for up to 3 days .

Ingredients (for 2 people):
- 2 good handfuls of fresh purslane
- 1 very ripe tomato , diced
- 50 g crumbled feta
- 1 small red onion , chopped
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Preparation :
- Wash the purslane thoroughly and drain it .
- Mix it in a salad bowl with the tomato, onion and feta.
- Drizzle with olive oil and lemon juice, then season with salt and pepper.
- Serve immediately and enjoy this ultra-fresh salad !
