Thyme is a small, sun-loving perennial with tiny, fragrant leaves borne on woody stems and crowned with delicate white flowers . Its sweet, warm, and resinous flavor enhances both stews and summer barbecues. Undemanding, rust-resistant, and compact, it forms dense mounds 15 to 25 cm high , perfect for borders, rock gardens, dry gardens, or herb containers.

Since antiquity, thyme has been considered a sacred plant . The Greeks used it to purify the air and boost courage, while the Egyptians used it in their ointments and embalming . In the Middle Ages, thyme was placed in armor to protect knights. Even today, its essential oil is recognized for its antiseptic, digestive, and respiratory properties , and thyme infusions are a classic winter remedy.

Farming method

Thyme requires seed stratification for 2 to 4 weeks . Sow indoors 10 weeks before the last frost , in a light potting mix, covering the seeds very lightly ( 1/16" ). Maintain a temperature of around 18°C ​​(64°F) and avoid over-moistening. Germination can take 14 to 28 days .

Transplant in full sun, in well-drained, sandy or rocky soil. Space plants 15 to 20 cm apart and rows 30 to 45 cm apart. Water very lightly ( level 1 ). Thyme is drought-tolerant.


Harvesting and preservation

Harvest preferably in the morning , when the essential oils are at their peak. Prune regularly to encourage dense, bushy growth.

Store the fresh stems in the refrigerator, lightly wrapped, for 1 to 2 weeks. To dry them, hang them in a dark, warm and well-ventilated place .
