The 'Amish Paste' tomato is a classic heirloom variety, prized for generations for its dense, sweet, and highly aromatic flesh , ideal for sauces, coulis, preserves, and roasted tomatoes. Originating in the Amish and discovered in Wisconsin, this late-season variety produces 6- to 8-ounce fruits , shaped like a teardrop or a heart , often with a slight yellow tinge at their base.

Indeterminate, vigorous, and reliable, it offers consistent production even under varying conditions and develops an exceptional flavor, making it one of the best pasta tomatoes available. Its meaty texture, while not very juicy, is also flavorful, making it a superb tomato for fresh cooking.

Farming method

Sow indoors 6 to 8 weeks before transplanting . Sow seeds 3–6 mm deep in a light potting mix, maintaining a temperature of 23–29 °C for rapid germination (5 to 10 days). Reduce watering and nitrogen during hardening off to strengthen the seedlings.

Transplant after all risk of frost has passed. Space plants 60 to 90 cm (24–36") apart, with 120 to 180 cm (4–6') between rows. Provide full sun , regular watering (level 3) , and sturdy staking to support the long, fruit-laden stems.


Harvesting and preservation

Harvest when the fruit is a vibrant red , while still remaining firm. Alternatively, pick when the tomato shows its first blush and then let it ripen off the vine at 22°C or higher . Store at 12–21°C , with 95% relative humidity , to preserve its fleshy texture.
