Organic 'Carbon' tomato (Solanum lycopersicum) from the seed company Gaia, a classic black tomato, deep, aromatic and of unparalleled richness

The 'Carbon' tomato is a must-have in the large family of black tomatoes. Indeterminate and vigorous, it produces large, purple-black fruits , sometimes slightly reddish at the base, with a melted, velvety texture typical of the best dark varieties. Their flavor is rich, deep, and complex, combining sweetness, subtle acidity, and a light smoky note—that aromatic intensity for which black tomatoes are renowned.

The fruits, classified as large to very large , are meaty, juicy, and absolutely delicious eaten fresh, in thick slices, or in heirloom salads. 'Carbon' is often cited among the best dark-colored tomatoes, rivaling Cherokee Purple, Black Krim, and Paul Robeson.

Farming method

Sow indoors 6 to 8 weeks before planting out . Place the seeds 3–6 mm (1/8–1/4") deep in a light potting mix. Maintain a temperature of 23–29 °C , ensuring germination in 5–10 days . Reduce water and nitrogen during the hardening-off period to produce vigorous seedlings.

Transplant when all risk of frost has passed. Space plants 60 to 90 cm (24–36") apart, and leave 120 to 180 cm (4–6') between rows. Provide full sun , regular watering (level 3) , and sturdy staking , essential for supporting the heavy, dark fruit.

Harvesting and preservation

Harvest when the fruit reaches a nearly black color with a dark red base. To get a head start, pick the fruit showing its first signs of color , then let it ripen off the vine at 22°C or higher . Store between 12–21°C , at 95% relative humidity, to preserve its dense texture.

Usage ideas

• Exceptional in thick slices , revealing its deep and velvety flesh
