Organic 'Oxheart White' tomato (Solanum lycopersicum) from the seed company Gaia, a splendid ivory-colored beefsteak tomato, sweet, sugary and surprisingly productive

The 'Oxheart White' tomato is one of the palest and most delicate varieties in the large beefsteak family. Indeterminate and highly productive, it develops relatively slender but surprisingly fruitful vines that bear ivory-colored, 6- to 10-ounce fruits with tender flesh and remarkable sweetness all summer long—and until the first frosts. Its flavor is sweet, light, and subtly fruity , perfect for elegant sandwiches, refined salads, or creating a rare, smooth, and velvety white tomato sauce .

Despite its delicate appearance, 'Oxheart White' produces abundantly and continuously. Its creamy texture and almost translucent color make it a sought-after heirloom tomato, prized as much for its unique aesthetic as for its deliciously different taste compared to traditional red tomatoes. Staking, recommended from the start, will quickly help manage the weight of its generous harvests.

Farming method

Sow indoors 6 to 8 weeks before the last frost. Bury the seeds 3–6 mm (1/8–1/4") deep in a light potting mix, then maintain a temperature of 23–29°C for germination in 5 to 10 days . Reduce watering and nitrogen during hardening off to produce strong plants despite their later delicate shape.

Transplant when temperatures are safe. Space plants 60 to 90 cm (24 to 36") apart with 120 to 180 cm (4 to 6') between rows. Provide full sun (level 3) , regular watering (watering level 3) , and install firm staking from the start, which is essential for supporting abundant fruit production.

Harvesting and preservation

Harvest when the fruit has reached its fully developed ivory or cream color. To bring forward the harvest, pick those showing their first signs of color (light yellowing), then let them ripen off the vine at 22°C or higher . Store them between 12 and 21°C with 95% relative humidity to maintain the fruit's sweetness and creamy texture.
