The 'Persimmon' tomato is a spectacular heirloom variety, prized for its large, peach-orange fruit and dense, velvety, and deeply aromatic flesh. Indeterminate and extraordinarily vigorous, it produces plump, beefsteak-type tomatoes in late summer, slightly bumpy at the shoulders and perfectly round at the base. Its color evolves from light green to deep peach , offering a warm and luminous gradient. The plants, remarkably hardy even in cool summers, typically bear one or two fruits per cluster , all resistant to cracking.

Farming method
Sow indoors 6 to 8 weeks before the last frost. Sow seeds 3–6 mm (1/8–1/4") deep in a light potting mix and maintain a temperature of 23–29°C to ensure germination in 5 to 10 days . Reduce watering and nitrogen during hardening off to develop strong, well-prepared seedlings for the field.
Transplant when all risk of frost has passed. Space the plants 60 to 90 cm (24 to 36") apart, with 120 to 180 cm (4 to 6') between rows. Provide full sun (level 3) , regular watering (watering level 3) , and sturdy staking , essential for supporting its enormous, heavy, fleshy fruit.
Harvesting and preservation
Harvest when the fruit reaches its beautiful peach-orange hue and yields slightly to pressure. To get a head start, pick the fruit as soon as it begins to color , then let it ripen off the vine at 22°C or higher . Store between 12 and 21°C with 95% relative humidity to preserve its creamy texture and fruity sweetness.
