Organic 'White Beauty' Tomato
Organic 'White Beauty' tomato (Solanum lycopersicum) from the seed company Gaia, a rare and elegant cream tomato with a sweet and lemony taste
'White Beauty' is a highly sought-after heirloom variety dating back to the 1920s. This unique tomato produces large, smooth, heavy, creamy-white fruits weighing between 150 and 200 g (6 to 8 oz). Their sweet, slightly acidic flesh with a subtle citrus note makes them a delicious culinary curiosity. Their pale color and velvety texture allow for the creation of stunning white sauces, as well as visually sophisticated salads.
Equally suited to partial shade and warm climates, 'White Beauty' is remarkably versatile. It is prolific in mid-season and, thanks to its indeterminate growth habit, continues to produce abundantly until the first frost. Its immaculate appearance and refined flavor make it an ideal tomato for gardeners wishing to cultivate an heirloom variety with a rare aesthetic.

Farming method
Sow indoors 6 to 8 weeks before the last frost date. Sow seeds 3 to 6 mm (1/8 to 1/4") deep in fine potting soil and maintain a temperature of 23 to 29°C for rapid germination (5 to 10 days). Reduce watering and nitrogen application during hardening-off to produce stronger generative plants.
Transplant outdoors when nighttime temperatures are above 10°C (50°F). Space plants 60-90 cm (24-36") apart with rows 120-180 cm (4-6') apart. Provide full sun (level 3), although the variety tolerates partial shade, and consistent watering (watering level 3). Sturdy staking is essential to support the large fruit.
Harvesting and preservation
Harvest when the creamy skin reaches its optimal color and the fruit is slightly soft. You can also pick when a pale yellow hue begins to appear and complete ripening off the vine at 22°C or higher. Store the fruit at 12–21°C with 95% relative humidity.
