Organic 'Erba Stella Greens'
'Erba Stella Greens' organic (Plantago coronopus) from the seed company Gaia, a delicate rosette with fine and crisp leaves
Erba Stella, also known as Minutina or Staghorn Fern , is a European heritage herb prized for its elegant rosette of long, slender, crisp leaves. Its delicate appearance adds a refined texture to salads, mixed greens, and light dishes. Harvested young, around 12 cm (5"), it offers a mild, slightly herbaceous flavor that perfectly complements spring salads. Although it is a perennial in its native coastal habitat, it generally behaves as an annual in our climates, as it does not tolerate deep frosts.

Farming method
Sow directly in the garden in early spring, as soon as the soil can be worked, or start seeds indoors 4 to 6 weeks before the last frost. Sow at a depth of 6 to 12 mm (1/4 to 1/2") in fertile, well-drained, and slightly moist soil. Space plants 15 cm (6") apart and rows 20 to 25 cm (8 to 10") apart. Germination takes 7 to 10 days at temperatures of 7 to 23°C, with optimal growth around 21°C.
Erba Stella thrives in partial shade or full sun (level 2) and requires moderate watering (level 2). Avoid overwatering to preserve the fine texture of the leaves and prevent disease.
Harvesting and preservation
Harvest the leaves when they are about 12 cm long for a tender texture and mild flavor. Cut at the base to encourage new growth. For best freshness, store the leaves in a perforated plastic bag in the refrigerator for up to 3 days.
