Prized for its delicate celery flavor, 'Giant Prague' celeriac is ideal for soups, stews, salads or vegetable juices. Its large, white, virtually fiberless roots offer a tender texture and refined taste. Roots harvested in the fall are the most flavorful and will keep well into the winter. Easier to grow than traditional celery, it is an excellent choice for both beginner and experienced gardeners.

How to grow:
Start seeds indoors 6-8 weeks before last frost. Sow on the surface of a soilless growing medium, keep at 65°F (18°C) until germination (10-20 days), then place in bright light. Transplant to the garden in late May, in fertile, well-drained soil, spacing plants 8 inches (20 cm) apart. Water regularly for optimum growth. In mild climates, sow directly outdoors from mid-April. Harvest when roots are 2-4 inches (5-10 cm) in diameter, in the fall for best flavor and storage.
