Its name comes from Ailsa Craig, a small island off the coast of Scotland , known for its spectacular scenery and granite used in the manufacture of curling stones.

Thanks to its tender and juicy flesh , it is ideal for salads, sandwiches and cooked dishes , bringing a delicate sweetness that enhances the recipes.
