French thyme

Latin name
Thymus vulgaris
Common name
French thyme
Type
Perennial
Family
Lamiaceae

French thyme is a perennial herb highly valued for its fine, compact, and intensely fragrant foliage with a warm, herbaceous, and slightly spicy flavor. An essential in Mediterranean and French cuisine, it is perfect for flavoring grilled meats, poultry, fish, roasted vegetables, potatoes, sauces, soups, marinades, broths, flavored oils, and slow-cooked dishes. Its low, dense habit also makes it an excellent plant for herb gardens, rock gardens, edible borders, and sunny containers near the kitchen.

Easy to grow, French thyme prefers a full sun, warm, and well-aired location, in light, poor to moderately fertile, and very well-drained soil. It tolerates dry conditions very well once established but does not tolerate excess water and heavy soils. In pots as well as in the ground, regular harvesting of young stems helps keep the plant compact, dense, and well-branched. Its leaves can be used fresh or dried, with a flavor often more concentrated after drying.

Both aromatic, decorative, and useful for pollinators, French thyme produces delicate flowers that attract bees and other beneficial insects to the garden. It pairs very well with rosemary, sage, oregano, lavender, santolina, and other sun-loving plants. It is an essential herb for creating a gourmet, fragrant, and easy-to-maintain garden, while adding a classic and flavorful touch to homemade recipes.
