Freezing beans:
- Preparation: Wash and hull the beans, then cut them into 2.5 to 5 cm pieces if desired.
- Blanching: Bring a large pot of water to a boil, immerse the beans in the boiling water for 3 minutes, then immediately transfer them to a bowl of ice water for 3 minutes.
- Drying: Drain beans well and pat dry with paper towels.
- Freezing: Arrange beans in a single layer on a baking sheet, freeze for a few hours, then transfer to freezer bags or airtight containers.
Canning Beans:
- Preparation: Wash and hull the beans, then cut them into 2.5 to 5 cm pieces if desired.
- Sterilizing Jars: Wash jars and lids in hot, soapy water, then sterilize in boiling water.
- Filling Jars: Fill jars with beans, leaving 1 inch headspace. Add salt solution (1 teaspoon salt per quart boiling water).
- Sealing: Wipe the rims of the jars, place the lids and screw on the rings without overtightening.
- Processing: Process jars in a pressure canner at 10 pounds of pressure for 20 minutes for quart jars (25 minutes for 500 ml jars).
