Organic ‘Paprika’ pepper (Capsicum annuum) is an organic heirloom, open-pollinated seed selected to produce red fruit for fresh eating or drying. Once completely dehydrated, fruit can be ground into colourful aromatic homemade paprika. “Paprika,” however, describes several pepper types and the workbook supplies no precise cultivar name, so shape, dimensions, and Scoville rating are not assumed. The workbook lists approximately 10 seeds, height of 60–75 cm, and spread near 40 cm.
Sow indoors February through April, approximately eight to ten weeks before last frost, 0.5–1 cm deep. Maintain 24–30°C and even moisture; emergence requires approximately 7–14 days. After germination provide intense light, pot up before roots become confined, and harden gradually. Transplant after frost once nights remain above approximately 10°C, into rich well-drained soil in full sun. A 15–20 L container suits one plant.
Harvest approximately 85 days after transplanting once fruit is uniformly red and fully developed according to the supplier workbook. To make powder, wash fruit, remove damaged portions, slice it, and dry it completely in suitable equipment before grinding. Residual moisture can cause mould; store powder dry in a clean airtight labelled container. Because heat can vary, taste carefully before seasoning a recipe. Discard any soft, mouldy, or abnormal-smelling fruit.
