Yellow Beetroot 'Touchstone Gold' (Beta vulgaris) – Offered by Ferme Tourne-Sol

The 'Touchstone Gold' beet is an exceptional variety, known for its bright golden yellow flesh , its mild and sweet flavor , and its tender texture even in large sizes . Unlike red beets, it does not stain and retains its beautiful color after cooking . Delicious raw, roasted or pureed , it is also perfect for colorful salads and stews .

? Sow directly into the open ground as soon as the soil has warmed up, in rows spaced 25 cm apart.

? Thin out to 7-10cm when young shoots reach 5cm, to allow good root development.

? Water regularly to prevent roots from becoming fibrous and to keep them soft.

Recipe idea: Roasted yellow beetroot and goat cheese salad

• 3 yellow beets 'Touchstone Gold'
• 50 g of fresh goat cheese
• 1 handful of crushed walnuts
• 2 tbsp olive oil
• 1 tbsp balsamic vinegar
• 1 tsp honey
• Salt and pepper to taste
• A few rocket or lamb's lettuce leaves

  1. Preheat the oven to 200°C (400°F).
  2. Wrap the beets in aluminum foil and roast for 45 to 50 minutes.
  3. Let cool, peel and cut into quarters.
  4. Mix oil, vinegar, honey, salt and pepper to make the dressing.
  5. Combine the beets with the crumbled goat cheese, walnuts and arugula leaves, then drizzle with the vinaigrette.
