Daikon radish is a traditional Asian variety , producing long, cylindrical white roots with crisp, sweet and juicy flesh. Less spicy than European radishes, it is ideal raw in salads, marinated, grated, fermented in kimchi or cooked in soups and stir-fries . Very resistant to cold, it is grown in late summer for a fall and winter harvest .
