Cardoon 'Blanc Ivoire' , also known as Cardo Bianco Avorio , is a Mediterranean heirloom variety prized for its broad, fleshy, bright ivory-white ribs. Its pointed, slightly notched, thornless leaves make it an elegant and easy-to-handle plant. This cardoon is perfect for temperate or Mediterranean climates and is an ideal choice for gardeners looking for a showy and tasty vegetable.

Cultivation method:



Start seeds indoors 8 to 12 weeks before the last expected frost date in your area. Sow seeds 1/4 inch (6 mm) deep in a well-drained soil mix and maintain a germination temperature of 70 to 80 °F (21 to 26 °C).



When seedlings are 1 to 2 inches (2.5 to 5 cm) tall, transplant them into individual 4-inch (10 cm) pots and reduce the temperature to 59 to 70 °F (15 to 21 °C). Harden off seedlings before transplanting them to the garden, once all danger of frost has passed.



Plant cardoons in fertile, organic, well-drained soil in full sun. Space plants 24 to 36 inches (60 to 90 cm) apart in the row, with rows 6 feet (1.75 m) apart. Mulch the soil to conserve moisture and prevent it from overheating in summer, which could trigger a summer dormancy period.



To promote optimum growth, water evenly throughout the season and apply a thin layer of mulch, gradually increasing to 4 inches (10 cm) as the plants mature. Protect cardoons from frost and extreme temperatures, especially in the harvest year.
