Cultivation method

Sow in successive crops every two weeks from June to mid-July when temperatures are cooler. Plant 3 mm (1/8 inch) deep , spacing seeds 2.5 cm (1 inch) apart in rows 40 cm (16 inches) apart. Once established, thin the plants to 30 cm (12 inches) to allow them to grow well.

Ensure regular watering throughout growth to avoid water stress, which can intensify bitterness and cause premature bolting . For a fall harvest, sow in mid- to late August : cool temperatures enhance the flavor and color of this radicchio.

Culinary use

Delicious raw in salad, thinly sliced ??with olive oil and balsamic vinegar to soften its bitterness. Sublimated in the pan, braised with a drizzle of honey and grated parmesan, it becomes melting and tasty. Ideal in a creamy risotto, a gourmet pizza or an Italian pasta dish.
