Endive 'Di Bruxelles' (Cichorium intybus), offered by the seed company Weston Seeds

'Di Bruxelles' endive, also known as Belgian Endive or Witloof, is an old variety cultivated since the 19th century for its ability to produce firm, pale, and delicate chicons with a slightly peppery flavor. After the roots are grown in summer, they can be forced in winter to obtain numerous tightly packed heads, perfect for winter salads or elegant culinary presentations. This vigorous chicory offers reliable production and outstanding quality when properly forced.

Cultivation method:
Sow the seeds in early spring. In autumn, when the foliage has withered, lift the roots, keeping only those at least 3 cm in diameter. Trim the foliage, leaving a 1 cm stub, then store the roots horizontally in dry sand or peat moss in a cool, frost-free location. For winter forcing, place the roots upright in pots filled with sand or a peat mixture. Water lightly and keep the pots in the dark at 10–15 °C until the buds form.
