Aniseed Fennel 'Romanesco' (Foeniculum vulgare var. azoricum), offered by the seed company Weston Seeds

?? An Italian heritage with refined taste! ??

Aniseed fennel 'Romanesco' is an Italian heirloom variety prized for its extra-large, round bulbs that develop an intense licorice flavor . Its tender, crunchy texture makes it a must-have ingredient both raw and cooked. This fennel is distinguished by its good tolerance to bolting , making it a reliable choice for gardeners seeking a bountiful, quality harvest.

?? A classic from the Italian vegetable garden that enhances your dishes!

Features :

Days to maturity: 80-85 days
Bulb size: 5-6 inches in diameter
Height: 18-24 inches
Plant spacing: 12-14 inches
Exposure: Full sun
Sowing: Indoor/direct sowing

Cultivation method:

Sow seeds directly into the ground in mid to late May in sunny, well-drained soil. For a quicker start, start seeds indoors 8 weeks before the last frost in a soilless mix. Maintain a temperature of 70°F (21°C) to promote germination in 10 to 14 days .

After emergence, lower the temperature slightly and acclimate the seedlings before transplanting them outside once the frost has passed. Sow seeds 3 mm (1/8?) deep and space them 2.5 cm (1?) apart before thinning to 25-30 cm (10-12?) to allow good bulb growth.

How to enjoy 'Romanesco' fennel?

Raw, it is eaten in thin strips in salads, bringing a crunchy and aniseed touch. Cooked, it becomes melting and develops a subtle sweetness, perfect for fish dishes, gratins or roasted in the oven with a drizzle of olive oil and parmesan. Its stems can flavor broths and its leaves are used as an aromatic herb.

?? Why grow 'Romanesco' anise fennel?
?? A unique, sweet and aniseed taste, perfect for Mediterranean cuisine

?? Good tolerance to heat and bolting
?? A versatile plant: bulb, stems and leaves are entirely edible!
