Red cabbage sprouts offer a vibrant purple color and a mild, slightly vegetal flavor, making them a popular microgreen for brightening up salads, sandwiches, hearty bowls, or as a garnish. Their vivid hue adds a decorative touch to dishes, while their easy cultivation allows for quick and even growth of tender, uniform sprouts at home.

Cultivation method:
Soak the seeds for a few hours, then place them in a jar with a sieve. Rinse twice a day by gently shaking and drain thoroughly before placing the jar back on its side. The sprouts will develop quickly and show their purple color within the first few days. Harvest at the desired length and allow to dry slightly before refrigerating for better preservation.

Soak the seeds for 4 to 6 hours to promote even germination and a quick start.

Yield
One tablespoon of seeds produces approximately 2 to 3 cups of colorful sprouts, ready to eat in 5 to 6 days or longer as microgreens.

Storage
Store unsprouted seeds in a cool, dry place, in the refrigerator or freezer to extend their shelf life.
