Cress microgreens
identification
description
Sprouting cress (Lepidium sativum), offered by the seed company Weston Seeds
Cress sprouts have a bright, slightly peppery, and highly aromatic flavor that instantly adds character to salads, sandwiches, and fresh dishes. Their delicate texture and small, decorative leaves make them a prized microgreen, valued for both their crisp taste and elegant presentation. Easy to grow without soaking, they germinate quickly and form a dense carpet of vibrant young shoots.
Height: 4 to 6 cm (sprouts), 8 to 12 cm (microgreens)
Spacing: Close-cropped surface area
Sowing: Indoor germination, without soaking
Exposure: Soft light
Quantity per packet: 90g of seeds, untreated, non-GMO
Cultivation method:
Use a natural clay surface, a thick, unbleached paper towel, or a thin layer of soil. Do not soak the seeds: spread them evenly over the moistened surface and mist twice a day to maintain consistent moisture. The sprouts will develop in just a few days and offer a characteristic peppery flavor. Cress can also be added in small quantities to sprouting mixes to enhance their flavor. Harvest at the desired height and allow to dry slightly before refrigerating.
Soaking
No soaking is necessary: cress seeds germinate directly when placed on a moistened surface.
Yield
One tablespoon of seeds will yield approximately 2 to 3 cups of sprouts, or microgreens in 8 to 12 days if left to develop further.
Storage
Store the seeds in a cool, dry place. A refrigerator or freezer will ensure optimal long-term storage.
