Mustard microgreens
identification
description
Mustard seeds for sprouting (Brassica juncea), offered by the seed company Weston Seeds
Mustard sprouts develop a bright, slightly peppery flavor reminiscent of fresh mustard. Their vibrant green color and distinctive aroma make them ideal for enhancing salads, sandwiches, wraps, or sprout mixes. Easy to grow in a simple moistened surface, they germinate quickly and produce slender, decorative sprouts that add character to your dishes.
Height: 4 to 7 cm
Spacing: Close-cropped surface area
Sowing: Indoor germination, without soaking
Exposure: Soft or indirect light
Quantity per packet: 50g of seeds, untreated, non-GMO
Cultivation method:
Use a natural clay surface, a thick, unbleached paper towel, or a thin layer of soil. Do not soak the seeds: spread them evenly on the moistened surface and mist lightly at least twice a day. The sprouts develop quickly and acquire their characteristic flavor within a few days. For added flavor variation, mustard can be added in small quantities to other sprouting mixes. Harvest by cutting at the base and allow to dry slightly before refrigerating.
Soaking
No soaking is necessary: mustard seeds germinate as soon as they are placed on a moistened surface.
Yield
Half a tablespoon of seeds produces approximately 2 to 3 cups of thin, aromatic sprouts.
Storage
Store unsprouted seeds in a cool, dry place. The refrigerator or freezer helps maintain an excellent germination rate.
