Kohlrabi 'Vienne Blanc' is an heirloom variety from the mid-1800s, prized for its rapid growth and delicate texture. This vegetable produces an enlarged, greenish-white stalk with minimal foliage and a slow tendency to bolt. Harvest when the stalk reaches 2 to 3 inches (5 to 7 cm) in diameter to enjoy its mild flavor and crisp texture. The white flesh offers a nutty taste when eaten raw, and a mild, subtle flavor when cooked.

Cultivation method:

Sow seeds directly outdoors from late April to late July, 1 cm (1/2 inch) deep and 2.5 cm (1 inch) apart. Space rows 30 to 45 cm (12 to 18 inches) apart. Once seedlings have emerged and are a few inches tall, thin them to 10 cm (4 inches) apart in the row to allow for good growth.

For best results, maintain regular irrigation, especially during dry spells, to avoid water stress. This is essential for tender, flavorful flesh. Harvest the stems when they are 2 to 3 inches (5 to 7 cm) in diameter, before they become fibrous.
