Corn Salad Valeriana, also known as lamb's lettuce, is a popular European heirloom vegetable. This plant forms small, low-growing rosettes with dark green leaves that have a delicate nutty flavour. Ideal for fresh salads, it is particularly tasty when harvested young and before flowering. Corn Salad tolerates a light frost well, which further enhances its flavour.

Cultivation method:

Direct sow every two weeks in spring, after the last frost, when soil temperatures are between 5°C and 20°C (41°F to 68°F). Sow 3 mm (1/8") deep and space seeds 6 mm (1/4") apart in rows 40 cm (16") apart. Once seeds have germinated, thin to 10 cm (4") between each plant.

Lamb's lettuce grows best in deep, fertile, well-drained soil in a location with full sun to light shade. To reduce bitterness, blanch the leaves by covering them 2 to 3 days before harvesting. When temperatures become warm, lamb's lettuce can bolt quickly.
