Horseradish

Armoracia rusticana, or horseradish, is a hardy and vigorous perennial plant, cultivated for centuries for its pungent white roots used as a condiment. It forms a rosette of large, upright, textured, bright green leaves, which add a beautiful presence to the edge of a vegetable patch or medicinal garden. In summer, it produces slender stalks of white flowers, decorative but discreet. Very cold-resistant, it adapts easily to various types of well-drained soils, but can become invasive if its expansion is not limited.
