This heirloom variety from the 1860s produces compact heads, dark green on the outside, with succulent, lightly blanched creamy white centers. Its mild, delicate flavor is perfect for raw preparations or lightly sautéed in olive oil. It is particularly suited to cool climates and develops quickly to produce tasty, tender crops. Grow it like lettuce, in rows or plots.

How to grow:
Sow seeds directly outdoors in June, 6mm deep, in rows 60cm apart. Once seedlings have developed, space them 20cm apart in the row. To promote tenderness and reduce bitterness, tie the large outer leaves around the centre about 7-10 days before harvest (ensure the leaves are dry). Harvest heads when well formed. Germination in 7-10 days.
