The 'Val-aux-Vents' shallot is a biennial variety cultivated as an annual, the result of patient selection begun in 2009 by Richard Favreau at his farm in Saint-Valérien . Its rounded bulbs, averaging around 60g, can grow larger when given ample spacing, revealing their full potential. Exceptionally sweet , with a fine and delicate flesh, this shallot is distinguished as much by its flavor as by its excellent storage capacity , making it a sought-after variety for refined cuisine and extended use.
