Farming method

Start seeds indoors 10 to 12 weeks before planting out , as celeriac is slow-growing initially. Transplanting is highly recommended and can be done 2 to 3 weeks before the last frost , in rich, deep, well-drained soil . Sow at a depth of 1.2 cm , then transplant, spacing plants 15 to 25 cm apart and rows 60 to 90 cm apart .

Celeriac prefers full sun (level 3) and regular watering (level 2) . Avoid prolonged drops in temperature at the beginning of cultivation, as the plant may bolt (go to seed) if temperatures fall below 12°C during the day and 4°C at night .

Harvesting and preservation

Before harvesting, tying the leaves together creates a blanching effect , improving the color and tenderness of the flesh. Harvest when fully mature, approximately 115 days after sowing , and then cool immediately after lifting to preserve quality. Store at 1 to 2°C , with a humidity of approximately 95% , for up to 2 weeks .
