The 'Pimiento Choricero' chili pepper is an heirloom Spanish variety prized for its sweet, earthy , and slightly smoky flavor , with a delicate heat of 175 to 300 SHU (sometimes 1,000–2,000 depending on the lineage). Its elongated red fruits, harvested when fully ripe, are traditionally dried in ristras , the decorative strings hung in Spanish kitchens. Once dried, they are rehydrated or ground into a paste to flavor sauces, stews, soups, and artisanal chorizos, where their distinctive aroma adds a unique depth. In the garden, the vigorous and productive plants offer an abundant harvest of bright red chilies with multiple culinary uses.

It is an authentic chili pepper, rich in history, delicious and indispensable to Iberian cuisine.

Farming method

Sow indoors 6 to 8 weeks before planting out, about 6 mm deep in warm potting soil. Maintain a temperature between 27 and 31°C to encourage germination in 7 to 21 days. Harden off seedlings to 18–19°C before planting them out in full sun (level 3). Water moderately (level 2). Space plants 30 to 45 cm apart and rows 60 to 75 cm apart. Well-drained soil promotes consistent production of long, glossy fruit.


Harvesting and preservation

Harvest when the fruits reach their characteristic deep red color . Regular picking encourages continuous production . For traditional drying, hang the peppers in ristras in a warm, well-ventilated area. For fresh storage, keep them at 10-12°C with high humidity.
