Cultivation method:
Sow seeds indoors 6 weeks before the last frost , then transplant seedlings outdoors in late spring when the soil is warm. Plant 1/4 to 1/2" (6 to 12 mm) deep , spacing plants 18-24" (45 to 60 cm) apart and rows 36-48" (90 to 120 cm) apart . Germination takes 15-20 days at an optimum temperature of 70°F ( 21°C) . This tomatillo tolerates partial shade well, but prefers full sun and well-drained soil for optimum production.
Harvest and uses:
The fruits are ready to harvest when their papillary covering turns yellow and begins to split . For best flavor, wash them with a mild soap to remove their natural sticky coating . Their deliciously sweet and slightly tart flavor makes them perfect for a variety of culinary preparations .

Ingredients :
500 g 'Amarylla' tomatillos , washed and quartered- 200 g sugar
- The juice and zest of one organic lemon
- 1/2 tsp grated ginger (optional)
Preparation :
- In a saucepan, mix the tomatillos, sugar, lemon juice and zest . Let stand for 30 minutes.
- Bring to a boil, then simmer for 30 to 40 minutes , stirring regularly.
- Add ginger if desired, then blend lightly for a smooth texture or leave chunks for a more rustic version.
- Pour into sterilized jars and store in the refrigerator.
