Gaia Seeds ' 'Deep Purple' Tomatillo is an exceptional heirloom variety , known for its unique deep purple flesh and skin , a rare characteristic among tomatillos. Cultivation method:


Sow seeds indoors 6 weeks before the last frost , then transplant to open ground in late spring , once the soil has warmed up. Plant 6-12 mm (1/4-1/2") deep , spacing plants 45-60 cm (18-24") apart and rows 90-120 cm (36-48") apart . Germination takes 15-20 days at an optimum temperature of 21°C (70°F). This variety prefers full sun and well-drained soil , with moderate watering to encourage abundant production.


Harvest and uses:


The fruits reach 5 cm (2 inches) in diameter and are ready to harvest when their papillose husks turn yellow and begin to split . Unlike green tomatillos, their skin and flesh remain intensely purple , making them as decorative as they are delicious. Their sweet, fruity flavor makes them perfect for eating grilled, raw in salads, or salsa .

Ingredients :






  • 500g 'Deep Purple' tomatillos , washed and halved




  • 1 jalapeño or serrano pepper (adjust according to your heat tolerance)




  • 1/2 red onion , cut into pieces


  • 1 clove of garlic


  • 1 tbsp olive oil


  • 1/2 cup fresh cilantro


  • Juice of 1/2 lime


  • Salt and pepper to taste






Preparation :






  1. Preheat the oven to 400°F (200°C) . Arrange the tomatillos, onion, garlic and chili pepper on a baking sheet and drizzle with olive oil.




  2. Roast for 15 minutes , until the tomatillos are golden brown and lightly caramelized.


  3. Let cool, then blend with the coriander, lemon juice, salt and pepper until you obtain a smooth sauce.


  4. Serve with tacos, nachos or grilled meats for an authentic Mexican touch! ???
