The Green Tomatillo from Gaia Seeds is an annual heirloom variety native to Mexico, producing small, sweet green fruits wrapped in a thin, papillate shell. This prolific shrub grows 3 to 4 feet (90 to 120 cm) tall and wide , and adapts well to partial shade . To ensure good production, it is necessary to grow at least two plants , as the tomatillo requires cross-pollination . The fruits are ready to harvest when their husks split and turn slightly yellow . Perfect for making salsa verde , it is a key ingredient in Mexican recipes.

Cultivation method:

Sow seeds indoors 6 weeks before the last frost , then transplant into the open ground in late spring when the soil is well warmed. Plant 6-12 mm (1/4-1/2") deep , spacing plants 45-60 cm (18-24") apart and rows 90-120 cm (36-48") apart . Germination takes about 15-20 days at an optimum temperature of 21°C (70°F). This plant appreciates well-drained soil and moderate watering .

The fruits are ripe when their skins turn from green to brown and begin to split . For best flavor, it is advisable to wash tomatillos with mild soap and rinse them well to remove their natural sticky coating . Mexican Recipe: Traditional Salsa Verde with Tomatillos ????

Salsa verde is an iconic Mexican sauce, perfect for accompanying tacos, enchiladas, grilled meats or even as a dip with nachos.

Ingredients :

  • 500 g green tomatillos (about 10-12 fruits)
  • 1 jalapeño or serrano pepper (adjust according to your heat tolerance)
  • 1/2 white onion , cut into pieces
  • 1 clove garlic , peeled
  • 1/2 cup fresh cilantro
  • Juice of 1/2 lime
  • Salt and pepper to taste
  • 1 tbsp olive oil (optional, for a smoother texture)

Preparation :

  1. Wash the tomatillos well and remove their husks. Rinse them under warm water to remove the sticky coating.
  2. Grill them with the jalapeño pepper in a hot pan (without oil) or in the oven at 200°C (400°F) for 10-15 minutes , until they are golden brown and slightly softened.
  3. In a blender, add the roasted tomatillos, chili pepper, onion, garlic and cilantro . Blend until smooth.
  4. Add lime juice , salt and pepper to taste. You can also add a spoonful of olive oil for a creamier texture.
  5. Serve immediately or let sit for 30 minutes in the refrigerator to allow flavors to develop further.
