Organic arugula is a leafy green salad green from the mustard family , prized for its bright green, finely cut leaves and distinctive peppery flavor . The leaves are tender when young, with a taste that is both pungent and slightly sweet , instantly enhancing dishes. This annual plant quickly develops a leafy clump and can reach a height of 60 to 90 cm if allowed to grow tall. It grows easily and steadily, even with minimal maintenance.

Very easy to grow, arugula is ideal for the family garden , whether planted directly in the ground or in containers 30 cm (12 inches) or larger. Just a few leaves are enough to transform a salad, soup, or sandwich. Safe for bees , it integrates well into organic vegetable gardens . Although it prefers cooler climates, it can produce throughout the summer with regular harvests and light protection from the heat.

Farming method

Sow directly in the garden once all risk of frost has passed and the soil temperature is cool. Sow at a depth of approximately 1.3 cm, gently firm the soil, and water lightly. Space the seeds 2.5 cm apart, then thin to 10 cm between plants when the seedlings have 2 to 3 pairs of leaves.

Keep the soil consistently moist during germination, which occurs in 4 to 7 days . Grow in full sun , with regular watering of about 5 cm (2 inches) per week . Sow successive batches every 2 to 3 weeks until the end of June, and again in the autumn. In hot weather, shade cloth helps to limit bolting (going to seed).

Harvesting and preservation

Harvesting begins around 43 days , but can start earlier for younger, more tender leaves . Harvest regularly to encourage regrowth and delay flowering.

The leaves can be kept in the refrigerator for a few days. For optimal flavor, consume them fresh shortly after harvesting.
