Also known as English thyme , common thyme is an essential culinary herb. Its warm, slightly lemony aroma perfectly complements roasted meats , egg dishes, cheeses , shellfish , and grilled vegetables such as zucchini, eggplant, and mushrooms. A compact, perennial plant that is very attractive to bees , it reaches 15 to 30 cm in height and makes it an excellent choice for edible gardens and flowering vegetable patches.

Planting and maintenance:
Sow on the surface or very lightly covered, as thyme seeds need light to germinate. Keep the soil slightly moist until germination. Transplant to a sunny location in light , dry or well-drained soil—essential for overwintering. Space plants 25–30 cm apart. Prune lightly to encourage branching and harvest stems as needed. Thyme becomes more aromatic in warm, dry weather.
