Organic 'Choricero' hot pepper
Organic hot pepper 'Choricero' (Capsicum annuum), offered by Les Jardins de l'Écoumène
The 'Choricero' pepper is a highly prized traditional Spanish variety , emblematic of the cuisine of La Rioja and the Basque Country . It is distinguished by its mild, rich, and slightly sweet flavor , with subtle smoky notes , which sets it apart from intensely hot peppers. Long and narrow, it develops a beautiful deep, dark red color when ripe, as attractive in the garden as it is in the kitchen. Its heat is very moderate , almost imperceptible to some, making it an approachable, balanced pepper that is easy to incorporate into many recipes.
Traditionally, the fruits are air-dried and then ground to obtain a flavorful and colorful paprika. 'Choricero' is known for its ability to enhance dishes without overpowering them , adding depth, richness, and color to sauces, stews, and typical preparations such as vizcaína sauce or certain chorizo variations. It is a distinctive, gourmet, and versatile chili pepper, ideal for lovers of authentic flavors.

Transplant outdoors when nights are consistently warm and all risk of frost has passed, in a sunny spot, which is essential for developing aroma and color.
Growing tips
Plant the seedlings in rich, well-drained, and warm soil. Regular watering is recommended, especially during flowering and fruiting, allowing the surface of the soil to dry slightly between waterings. To check the soil moisture, insert a finger about 5 cm into the soil : if it feels dry at this depth, water. Light staking may be helpful when the crop becomes abundant.
Harvesting and uses
Harvest the fruits when fully ripe, having reached their characteristic deep red color , at which point their flavor is at its richest. The peppers can be used fresh, but are particularly remarkable once dried and then ground into a powder. Mild, fragrant, and deeply flavorful , the 'Choricero' pepper is an excellent choice for those who wish to cultivate a refined culinary pepper, inspired by the great gastronomic traditions of Spain.
