Red climbing bean 'Red Noodle' (Vigna unguiculata var. sesquipedalis), Offered by Ferme Tourne-Sol

The Red Noodle (Asparagus Bean 'Red Noodle') is a spectacular Asian variety producing very long red pods , reaching 45 to 55 cm in length, while remaining tender , juicy , and stringless. Despite their impressive appearance, these beans cook quickly and offer a mild, delicate, and slightly sweet flavor. Very vigorous , productive , and heat-tolerant , it climbs rapidly on trellises or poles and produces continuously throughout the warm season.

Its unique red color is partially retained during cooking, making it a vegetable that is as much ornamental as it is culinary , perfect for attracting attention in any vegetable garden.

Farming method

The 'Red Noodle' climbing bean prefers full sun and warm , light , well-drained soil enriched with compost. Sow directly outdoors when temperatures exceed 16–18°C , as it does not tolerate cold soils well. Install a trellis, fence, strings, or sturdy poles to support its rapid growth, which can reach up to 3 meters.

Space the plants 30 to 40 cm apart and water regularly, especially during the early stages of growth. Frequent harvesting encourages the continuous production of long, straight, and colorful pods. Highly heat-tolerant, it performs particularly well in hot summers.

Uses and benefits

The 'Red Noodle' bean is excellent stir-fried, grilled, steamed, or added to Asian dishes thanks to its fine texture and natural sweetness. It is perfect for wok stir-fries , curries , light pan-fries , and stews , where its impressive length creates a unique presentation. Highly nutritious, it is rich in fiber , B vitamins , plant-based protein , and essential minerals , supporting a balanced diet while offering an attractive alternative to traditional green beans. Its climbing habit also makes it an excellent choice for maximizing space in small gardens.
