Farming method

The 'San Marzano' tomato thrives in full sun , in rich , deep , well-drained soil, generously enriched with compost. Start seeds indoors 6 to 8 weeks before the last frost and transplant outdoors when nighttime temperatures exceed 10°C (50°F) . As it is an indeterminate variety, it requires sturdy staking to support its heavy-fruiting stems.

Space the plants 50 to 70 cm apart to ensure good air circulation and limit the development of foliar diseases. Water at the base to avoid wetting the foliage and apply mulch to retain moisture and protect the roots.

Uses and benefits

The 'San Marzano' tomato is the essential ingredient for preparing Italian sauces , thick coulis , stews , casseroles , pizzas , and preserves . Its dense, slightly juicy texture and mild, sweet flavor allow you to create glossy, flavorful sauces without needing to reduce them for long periods. It's also delicious roasted, in salsas, or simply baked with herbs. Rich in lycopene , vitamin C , antioxidants , and minerals , it supports a healthy diet while adding an authentic touch to all Italian-inspired dishes.
