Soybean microgreens
Germinating soybeans (Glycine max), offered by the seed company Weston Seeds
Bean sprouts are plump, crunchy, and slightly sweet, perfect for stir-fries, rolls, salads, or Asian-inspired dishes. Their robust texture and delicate sweetness make them a favorite for adding volume and fresh, vegetal flavor to meals. Germination is quick and easy, yielding a bountiful harvest in just a few days.
Height: 6 to 12 cm
Spacing: Close-cropped in jars
Sowing: Soaking + indoor germination
Exposure: Darkness recommended
Quantity per packet: 90g of seeds, untreated, non-GMO
Cultivation method:
Soak the seeds overnight, then place them in a jar with a sieve, tilted to ensure good ventilation. Rinse and drain several times a day to encourage the development of thick, crisp sprouts. Keep them in the dark to prevent bitterness and achieve a uniform pale color. Harvest at the desired length and allow them to dry slightly before refrigerating.
Soaking
Soak the seeds for about 8 hours to ensure complete hydration and a uniform start to germination.
Yield
One tablespoon of seeds produces approximately 2 to 3 cups of firm, crisp sprouts ideal for baking or fresh dishes.
Storage
Store unsprouted seeds in a cool, dry place. Refrigerating or freezing them will preserve their quality and extend their shelf life.
