Sprouting mung bean (Vigna radiata), offered by the seed company Weston Seeds

Mung bean sprouts are distinguished by their thick, crisp, and juicy stems, ideal for stir-fries, salads, and Asian-inspired dishes. Mild in flavor when grown in the dark, they offer a much-appreciated firm texture and a bountiful harvest in just a few days. Their ease of cultivation at home makes them a must-have sprout for readily available fresh food.

Cultivation method:
Soak the seeds for several hours, then place them in a tilted jar fitted with a sieve. Rinse and drain two to four times a day to encourage thick, crisp sprouts. Keep them away from light to prevent bitterness. Harvest when they reach the desired length and allow them to dry slightly before refrigerating.

Soak the seeds for 4 to 8 hours to ensure even hydration and a rapid start to germination.

Yield
One tablespoon of seeds produces approximately 2 to 3 cups of crisp, white sprouts, perfect for a variety of dishes.
