Organically grown arugula microgreens are distinguished by their more pungent and peppery flavor , typical of arugula, which adds character to dishes. Their texture is fine and crisp , ideal for enhancing salads , soups , and hot dishes just before serving. Highly valued in raw food diets, they offer a pleasant aromatic intensity without being overpowering.

They are mucilaginous seeds : upon contact with water, they release a gelatinous substance, which influences their cultivation. Cultivation method:

Rocket seeds are mucilaginous , so they are best grown without pre-soaking . For microgreens , sow the seeds directly onto a growing tray or germination dish, with or without substrate, then gently moisten . Avoid rinsing, as the gelatinous substance naturally retains moisture.

Maintain consistent humidity without over-moistening and place the tray in a bright, indirect light location. For sprouts , arugula is often grown mixed with other non-mucilaginous seeds , such as alfalfa, to facilitate germination and aeration.

Harvest :

Sprouts can be eaten after about 5 days , while microgreens are ready between 10 and 14 days , when the first true leaves are well developed. Harvest by cutting at the base with clean scissors and eat them fresh to fully enjoy their taste and benefits.
