Sage is a versatile heirloom variety, prized for its distinct fragrance and slightly bitter flavor. This culinary herb produces grayish leaves that can be used fresh or dried to flavor meats, soups, and cheese dishes. Its blue-purple flowers add a decorative touch and attract pollinators. The mature plant, reaching up to 60 cm (2 feet) tall, requires regular pruning to stimulate new, more tender, flavorful growth.

Cultivation method:

Sow directly outdoors in well-drained, sunny soil in late May, after the last frost. In zones 6 and above, additional sowing can be done from mid-August to mid-September to extend the harvest season.

For indoor starting, start seeds in a soilless mix 6 to 8 weeks before the last frost date. Maintain a temperature of 70°F (21°C) to promote successful germination in 14 to 21 days. After germination, reduce the temperature slightly before hardening off and transplanting the seedlings outdoors.

Sow seeds 6mm (1/4") deep and space 2cm (3/4") apart. Once seedlings have emerged, thin to 60-90cm (24-36") apart to allow each plant to develop fully. Prune back woody parts regularly to encourage new growth.
